Cooking Teacher

The FSA is looking for Culinary instructors to provide appliance and cooking technique training and education to FSA students, members and clients through demonstrations in the Centre, in person or onsite. You will be required to teach the assigned culinary and hospitality courses in accordance with the academy’s food programme in the following areas:

  • English & European food
  • African Food
  • Caribbean Food
  • Asian Food
  • Other International Dishes

Requirements

  • Lead workforce to implement BCF accreditation of the academy.
  • Manage and mentor the Academy or FSA community catering & hospitality teams including training of new employees, students, and interns.
  • Control food and payroll costs to achieve maximum profitability.
  • Administer culinary and hospitality instruction at various educational training centres to future culinary professionals through guide course curriculum and hands-on demonstration.
  • Develop recreational cooking classes for kids and adults.
  • Lead assistant and fellow chefs through events and classes.
  • Administer the Serv-Safe exam to students and private businesses for certification.
  • Enforce work and sanitation policy guidelines and training in accordance to ServSafe.
  • Instruct kids in recipe making, sanitary practices, cooking, and baking.
  • Cater events on and off-premise and ensure that the students follow all HACCP guidelines.
  • Work with Club Houses to enable top students to compete in front of some of the most high-profile chefs around the world.
  • Ensure high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.
  • Utilize this knowledge as basis for the academy's cooking classes which give the students an authentic understanding of various international cuisines.
  • Instruct students in ManageFirst and ServSafe curriculum.
  • Supervise students in proper sanitation practices and safety procedures according to HACCP regulations.
  • Help students discover their culinary skills by allowing and motivating them to experiment with different classical and modern culinary techniques.
  • Own and operate successful gourmet restaurant/bakery/catering service
  • Operate and maintain cleaning equipment and tools, including the dishwasher, hand wash station, pot-scrubbing station and trash compactor.
  • Prepare unique gourmet buffets to satisfy actors, artists, brides & grooms at event venues.
  • Monitor the buffets, organize inventory, purchase orders, record temperatures, make chocolate sculptures, and sugar sculptures.
  • Own and operate successful gourmet restaurant/bakery/catering service (Not essential)

Responsibilities

  • Support student recruitment and retention, including academic advisement of program students and outreach to potential students
  • Incorporates a variety of teaching methods and materials to assist students with differing educational experiences, experiential backgrounds, and learning styles to assist them in meeting course competencies
  • Participate in non-teaching assignments including recruitment, instructional development, academic advising, registration assignments, academy-wide and/or departmental activities, clubs and councils, committees, professional development, internal and external service, and other assigned responsibilities determined in consultation with the Academy director.
  • Supervise and coordinate all aspects of food production within a teaching kitchen
  • Participate in annual assessment reporting and reaccreditation
  • Provides instruction to students in both theory and practice of Culinary Arts
  • Provide quality and timely access to students and communicate availability through appropriate methods such as posted campus/office hours and electronic communication
  • The position requires teaching 15-18 credit hours each semester
